Hari Raya is just around the corner with many now looking forward to Hari Raya dishes and recipes to grace their open houses.

While it’s not a norm for us at KuchingBorneo to share cooking recipes, we thought it would be good to share selected recipes to our readers for the upcoming celebrations.

These recipes are not only delicious, but they are also easy to make, thanks to EB Frozen products.

Five Hari Raya dishes and recipes

With the idea of creating dishes that are not only tasty, but here’s also five dishes and its recipes which would make quite an impression for the coming Hari Raya celebrations.

Recipe 1: Pasembur Tempura Chicken Nugget

Main dish ingredients:

  • EB Tempura Chicken Nugget
  • 4 Hard-boiled eggs
  • 100g Blanched Bean Sprout
  • 1 Cucumber
  • 1 Yam Bean
  • 1 Fried Tofu

Sauce ingredients:

  • Sauce Ingredient A:  For best results, 10 dried chillies, 5 shallots and garlics with 50ml of water needs to be blended until they are evenly mixed.  If you want spicier sauce, increase the number of dried chillies into the mix.
  • Sauce Ingredient B: Mix 100g Roasted Peanut Powder with 100g Palm Sugar, 10g Tamarind Juice, one tablespoon of salt, one tablespoon of soy sauce, 200ml of water and 300g of blended sweet potato.

Cooking instruction:

  1. Cut the cucumber and yam bean into shreds.
  2. Heat some oil and deep fry the Tempura Chicken Nugget until it turns golden brown. Once ready, set them aside.
  3. Blend Sauce Ingredient A until smooth.
  4. Pour the blended mixture into a pan and heat them.
  5. Add in Sauce Ingredient B and mix well.
  6. Place the cucumber shreds, yam bean shred, blanched bean sprout and hard-boiled egg on a plate.
  7. Garnish with Tempura Chicken Nugget and enjoy with the sauce.

Recipe 2: Roti John Tempura Chicken Nugget

Main dish ingredients:

  • 4 pieces of EB Tempura Chicken Nugget
  • Roti John (Sliced in the middle)
  • Planta (Adequate)
  • Mayonnaise (Adequate)
  • Chilli sauce (Adequate)
  • Thousand Islands sauce (Adequate)

Egg barter/mixture

The egg barter can be prepared using two eggs, and an adequate amount of onion leaves and salt. Mix all three ingredients well.

Cooking instruction:

  1. Heat some oil and deep fry Tempura Chicken Nugget until golden brown. Once done set them aside.
  2. Mix well the eggs, chopped spring onion and salt.
  3. Heat the pan with butter and add in the egg mixture.
  4. When the egg is almost set, place the bread on the egg mixture.
  5. Spread some mayonnaise on one side, chilli sauce on the other side.
  6. Top with Tempura Chicken Nugget and Thousand Island Sauce, then gather the bread together.

Recipe 3: Soy Sauce mee with Crispy Fried Chicken Wonton

Main dish ingredients:

  • EB Crispy Fried Chicken Wonton
  • Bok Choy
  • 2 packs of Wonton mee
  • Chilli (Adequate)
  • Onion Leaves (Adequate)

Soy sauce mixture

The Soy sauce mixture will require the mixing of 4 tablespoons of soy sauce and Oyster sauce, two table spoons of thick soy sauce and sesame oil. You should mix all four ingredients well so that it is properly mixed.

Cooking instructions

  1. Heat some oil and deep fry Crispy Fried Chicken Wonton until golden brown, and then set it aside.
  2. Heat the sauce mixture.
  3. Blanch the Bok Choy and wonton noodles. Do not blanch the Bok Choy too long as it will turn yellowish if you do so.
  4. Mix wonton noodles with the sauce, serve with Bok Choy and Crispy Fried Chicken Wonton.
  5. Garnish with chili and spring onion.

Recipe 4: Fried Maggi with Crispy Fried Chicken Wonton

Main dish ingredients:

  • 4-6 Crispy Fried Chicken Wonton (deep-fry)
  • 2 cloves garlic (minced)
  • 1 onion (minced)
  • 1 egg
  • 10g bean sprout (blanched)
  • 1 lime (halved)
  • Lettuce (adequate, sliced thinly)
  • 1 tomato (wedged)
  • Spring onion (chopped)
  • 1 block of tofu (Deep-fry, cut into slices)
  • 1 Instant noodle (blanched)
  • Cooking oil (adequate)

Seasoning Mixture:

Mix two tablespoons of soy sauce, tomato sauce and chilli sauce with one table spoon of water.

Cooking instructions:

  1. Heat some cooking oil and deep fry Crispy Fried Chicken Wonton, set aside.
  2. Fry minced garlic and onion until fragrant, then an egg.
  3. Add in cooked instant noodle, blanched bean sprout, tomato, and deep-fried tofu.
  4. Stir in seasoning mixture accordingly.
  5. Served with Crispy Fried Chicken Wonton, spring onion, lettuce, and lime.

Recipe 5: 3 Flavours Chicken Roll Rendang

Main dish ingredients:

  • EB Chicken Roll (Original)
  • EB Chicken Roll (Cheese)
  • Eb Chicken Roll (Salted Egg)
  • 2 cloves of Garlic
  • 2 Shallot
  • 2 Lemongrass
  • 1 packet of Rendang Paste

Cooking instructions

  1. Heat some oil in a pan, add in 3 flavours Chicken Roll, deep fry them until golden brown then set aside.
  2. Heat some oil to stir-fry the garlic, shallot, and lemon grass.
  3. Add in rendang paste and mix well with other ingredients.
  4. Add in chicken rolls and coat them evenly.

Tempura Chicken Nugget

The EB Tempura Chicken Nugget is made from chicken breast meat and coated with tempura batter. This means the nuggets are free of trans fat.

There are generally three ways to cook this Tempura Chicken Nugget, which is by air frying for seven minutes at a temperature of 200°C or frying 170°C for 3 – 4 minutes until the dish turns golden brown.

If frying isn’t your preferred style of cooking, the Tempura Chicken Nugget can also be baked by pre-heating the oven to 230°C before the tempura is baked for 10 minutes.

Despite the ease of preparing the nuggets, it retains its taste and texture, being juicy on the inside, light and crispy on the outside.

Chicken Wonton

Wonton is typically wrapped with meat, and here EB is offering the same delicious Chicken Wonton with a fraction of its usual preparation time. Made using tender & moist breast meat, the wonton is crispy, and offers an aromatic & flavourful dish once ready.

The dish has no trans-fat, and it is cooked by deep frying the wonton into crispy golden-brown perfection.

Deep-frying the frozen wonton can be done in two ways, with or without thawing, hence making it very convenient for those with time constraints.

For non-thawing deep frying, heat the oil until it’s 160°C – 170°C, before frying the wonton for 2 – 3 minutes.

For those thawing the wanton, frying time is reduced to 1 – 2 minutes, but the temperature of the cooking oil must be between 170°C – 180°C for best results.

Chicken Rolls

The Chicken Rolls come in Original, Cheese and Salted Egg flavour.

Like all the products in EB’s Chicken Series, the Chicken Rolls is also void of trans-fat.

The product is made from clean diced chicken meat, which is seasoned to perfection and wrapped with bean curd skin.

It can be prepared in three frying ways, namely through air-frying, deep-frying and pan frying.

Air-frying is much recommended for this product in which one would need to thaw it with a microwave for 3 – 4 minutes, before frying it at 180°C for 2 – 3 minutes.

If deep frying is your preferred way of cooking, you will need to thaw the product for an hour before frying it at 160°C for 6 – 8 minutes.

Pan frying on the other hand requires an hour-long thawing time, with the frying requiring observation towards the change of product colour. If cooked, the product turns golden brown under medium heat.

A well-prepared EB Chicken Rolls will be succulent, tender and packed with soy aroma.
